Wild Rice and Mushroom

 

Looking for a gluten free dish?  This rice with mushroom is made with gluten free rice.  This type of rice is a blend of wild and whole grain brown rice.  While this blend is a little more expensive than regular rice, I find it to be healthier.

The only downside of this type of rice is that it takes much longer to cook than the regular rice, but if you plan your meals ahead of time, you will be prepared to be in the kitchen a little bit longer than usually.

For this dish, you will cook the rice first, and then add the rice to the vegetables.   

1 cup Lundberg Wild Blend (gluten free rice)

2 tbs Sherry wine (optional)

2 cloves garlic (minced)

2 tbs onions (chopped)

1 cup of mushroom (chopped)

Salt and pepper

1 tbs extra virgin olive oil 

Cook rice according to directions on bag. Keep warm.

Meanwhile heat the oil in a medium skillet or sauce pan over low heat.

Add the onions.  Stir

Add the garlic.

Add one cup of mushroom.  Saute.

Add the Sherry wine.

Add salt and pepper.  Stir.

Add the cooked rice and stir until the rice is blended with the mushroom mixture.
